Hot and sour soup

Ingredients

  1. 2 tablespoon olive oil
  2. 2 tablespoon fresh green beans, finely chopped
  3. 1 tablespoon mushrooms, finely chopped
  4. ½ cup cabbage, finely chopped
  5. ½ cup carrots, very finely chopped
  6. ½ teaspoon red chilli powder, or to taste
  7. 2 teaspoon soy sauce, to taste
  8. 1 tablespoon tomato purée
  9. 1 tablespoon sugar
  10. 1 tablespoon cider vinegar
  11. 1 teaspoon salt, to taste
  12. 3-4 cups water
  13. 1 tablespoon cornflour or rice flour (optional)

Directions

  1. Heat the oil in a pan and sauté the green beans and mushrooms.
  2. Add cabbage and carrots and sauté for 2 more minutes.
  3. Add all the other ingredients and bring to the boil. Simmer for 5 minutes and serve.
  4. For a thicker consistency, mix 1 tablespoon of cornflour or rice flour with ½ cup of soup stock and return it to the pan. Simmer for a few more minutes.
  5. Serve hot.
