Stuffed parathas

Ingredients

  1. Dough as for chapattis
  2. Grated carrot
  3. Mashed potatoes
  4. Paneer (home-made cottage cheese)
  5. Ground coriander (to taste)
  6. Ground cloves (to taste)
  7. Ground cinnamon (to taste)
  8. Black pepper or fresh chilli (to taste)
  9. Fresh coriander leaves
  10. Fresh parsley leaves
  11. Salt

Directions

    For Carrot Filling

    1. Add salt, black pepper or chopped chillies, ground coriander, cinnamon, ground cloves into the grated carrot.
    2. Sprinkle some chopped coriander and parsley leaves and mix the filling well.

    For Mashed Potatoes Filling

    1. Add salt, black pepper or chopped chillies, ground coriander, cinnamon, ground cloves into the mashed potatoes
    2. Sprinkle some chopped coriander and parsley leaves and mix the filling well.

    For Paneer Filling

    1. Add salt, black pepper or chopped chillies, ground coriander, cinnamon, ground cloves into the paneer
    2. Sprinkle some chopped coriander and parsley leaves and mix the filling well.

    For Paratha Making

    1. Pinch a small ball from the dough. Roll the ball into a small thin disc shape using the rolling board and rolling pin.
    2. Brush 1tbs oil on the rolled dough and place a handful of filling in the middle and carefully fold the dough.
    3. Roll the filling dough again.
    4. Heat a frying pan and place the rolled dough and let it cook for few minutes.
    5. Add some oil around the dough whenever necessary. Make sure that you turn the paratha constantly until its cooked for about 5-6minutes (tip: using a spatula press the paratha for the oil to soaked in).
    6. Once cooked, remove the paratha from the pan and brush some ghee to both sides.
    7. Wrap the paratha in a napkin and store it in a special container.
    8. Follow the above steps for all the fillings (tip: cooking time is same for all the fillings).
