A true "veggie" quesadilla. Packed with a variety of vegetables and beans.

Ingredients
For the subzi

cup
tomatoes
1
cup
corn
1
cup
zucchini
1
cup
carrots
1
cup
yellow squash
1
cup
red pepper
1
cup
yellow pepper
1
cup
green pepper
For the beans
1
can large kidney beans
½
cup
mixed peppers, green, red, yellow
½
cup
tomato sauce
1
teaspoon
oregano
2
teaspoon
olive oil
Salt and pepper
Cheese
Flour tortillas
Directions
For the beans
In a pan add the olive oil, oregano and black pepper
Then add the mixed peppers
Add the tomato sauce and a pinch of salt
Add the can of kidney beans
Mix thoroughly for 5 minutes, remove from heat
For the subzi
In a pan add the olive oil, oregano and black pepper
Add the green peppers, red peppers and yellow peppers, yellow squash, corn, carrots and zucchini
Add 1 tsp salt
Cover for 10 minutes
After 10 minutes add the tomatoes and leave until the water is all evaporated
Take a tortilla and spread the bean mixture on it
Then take some of the vegetable subzi and spread on the tortilla
Sprinkle some cheese over it
Cover with another tortilla
Spread a little butter on both sides
Place in a press for two minutes
Eat with sour cream, salsa or guacamole
